Understanding Hanging Weight vs. Take-Home Weight:
Our beef is priced based on hanging weight, which is the weight of the animal after slaughter and dressing (before it’s cut and packaged). Once the meat is trimmed, aged, and wrapped, the take-home weight is typically about 60–70% of the hanging weight. This means your final boxed beef will weigh less than the hanging weight, reflecting normal loss from bone, fat, and moisture during processing.
