was one of the most widely grown soft red winter grains raised in Colonial America following its introduction from the British Isles as early as the 1600s. Its early maturity also led to the name “May wheat” and it is believed to have descended from crops raised by Celtic farmers of the Roman era. In some parts of Early America it was called Orange wheat for the deep rich hue of its kernels. In the warmer climes of the American West like the “Inland Empire” of the vast Columbia Plateau, this variety typically formed heads in mid-April and ripened up to three weeks earlier than most other winter wheats.
