Recently made a discovery of an old album that had the original wild rice harvesters from the 80’s!

It’s incredible that this rice stand is as health as ever and has existed at least 40+ years providing a self sustaining local food source and and fantastic waterfowl habitat!

Heavy Metals

Those of you familiar with the Silver Valley and its long history of mining are sure to be curious about the potential down steam effects that decades of mining run-off have caused. Because we wild harvest (forage) in the southern end of Lake Coeur d' Alene we are very attentive to the potential of heavy metals making ttheir way into your meal. The great news is that wild rice accumulates relatively no heavy metals and less than a quarter the arsenic of found in typical white rice which can reach levels of 200ppb. In part this is due to the incredible structure of plant roots which have a ring of suberin called the Casparian strip which prevents the apoplectic movement of solutes such as heavy metals. Where does your food come from?

Our wild rice is harvested from the southern reaches of Lake Coeur d' Alene in beautiful Northern Idaho. The Idaho panhandle provides the perfect climate to grow some of the highest quality wild rice in the world.

How long is uncooked and cooked wild rice good for?

Uncooked (in package & pantry) 3-5 years Cooked (stored in the fridge) 4-6 days Cooked (stored in freezer) 4-6 months

How to cook wild rice:)

There are lots of ways to cook wild rice, and it can be cooked from slightly crunchy to soft and anywhere in-between. CD'A wild rice has an astoundingly large grain and can take slightly longer to cook compared to standard wild rice, but don't be deterred it is well worth the wait! Stove Top Cooking Wash by running cold water through wild rice in a strainer. One helpful option can be to soak the wild rice for 20-60mins before cooking on stove top, this allows the wild rice to soften and will better absorb the water when cooking. Add wild rice in a pan water or broth in a 1:3 ratio. Cover and bring to a boil. Boil for 10 minutes. Reduce heat and simmer for 35-45minutes, leave pot loosely covered. (cook until at desired softness has been achieved) Add salt to taste after cooking. Undercook for a more nut-like, slightly crunchy texture or cook a little longer for a tender, fluffier texture. Do not overcook. Baking Place wild rice and liquid in pan in oven, set oven to 325 degrees and bake 1 hour 15 minutes to 1 hour 30 minutes. Slow Cooking Place wild rice and liquid in saucepan on stove and bring to boil. Cover, remove from heat and let stand for 3-4 hours. Wild rice will be about 90% cooked. Complete cooking in a main dish. Salt to taste after cooking. Cook up more than immediately needed and freeze the rest to be used in a variety of dishes. Instapot (fastest cooking) Add wild rice and water or broth, 1:2 ratio. After cooking time is up, release pressure and fluff with a fork, salt to taste, cook longer if desired. After releasing pressure let stand for 5-15 minutesl. Settings Ultra settingsHigh pressureTime: 20-25 minutes, (crunchy - softer)Keep warm after cooking.

What is wild rice??

Wild rice (Zizania palustris) is an indigenous North American aquatic grass, growing in the silty shallows of rivers and lakes. Its grains boast one of the highest protein contents of any grain, with an abundance of fiber and micronutrients, and it naturally does not contain any gluten. It is truly an ecosystem unto itself, providing a food source and habitat for migratory birds, schools of fish, ladybugs and many other fauna.
