What makes your flour different from store-bought brands?

Our flour is fresh-milled in small batches, never bleached, and free of preservatives. We use stone mills to produce flour with exceptional flavor and nutrition. Many of our customers say they notice a difference in how our flour tastes and even how it feels to digest.

Why don’t you sell “all-purpose” flour?

We believe there’s no such thing as a one-size-fits-all flour. Different baked goods need different protein levels and characteristics to achieve the best results. That’s why we offer specific flours designed for what you are looking to make: bread flour, pastry, pasta, pizza, and more!

How is your flour grown?

Our grain is cultivated using regenerative farming methods that restore the land, not strip it. We use cover cropping, compost spreading, and crop rotation to build soil health naturally. These practices go beyond minimum industry standards: rebuilding soil, recharging groundwater, and producing grain with richer flavor and better baking performance.

Melgard Farm is a small, family-run farm in Ripon, California, rooted in a simple belief: good food begins with good grain. With just 90 acres under cultivation — wheat, corn, and almonds — we remain intentionally small so that every field, every harvest, and every bag of flour reflects the care and craftsmanship of our family.

Unlike large-scale operations, we are fully hands-on — planting, tending, harvesting, and milling our own grain. This vertically integrated approach gives us complete control from field to flour, ensuring purity, freshness, and flavor that you can truly taste.

Our mission is to grow regeneratively, mill with care, and provide flour that inspires better baking and cooking, whether at your own table or in a professional kitchen.
Our Story
Farming is more than our livelihood — it’s our heritage. Melgard Farm began with the vision of honoring the land while producing grains that nourish both people and community. Over time, we have embraced regenerative practices that protect soil health, conserve water, and promote biodiversity. Every decision we make — from crop rotation to milling methods — reflects our responsibility to leave the land better than we found it.

We believe flour is not just an ingredient but a foundation of culture and connection. That’s why our goal is not only to grow wheat, but to grow trust: trust in the quality of what you’re feeding your family.
Our Milling Process
Great flour begins in the field, but it comes to life in the mill. At Melgard Farm, we use Meadows stone mills made of Balfour Pink Granite, which gently grind the wheat while preserving natural oils, nutrients, and flavors. To refine textures and achieve consistent results, we carefully sift with Italian sifters, balancing flavor with bakeability.

In 2025, we are adding a French-style Astrié mill — one of very few in the U.S. This unique mill allows us to create exceptionally fine, white flour without bleaching or additives, making it ideal for artisan bakers who value both tradition and performance.
