Our Tropical Forest varietal comes from the wild, prolifically blooming forests of northern Hilo. This particular harvest was blessed by the uncommon yellow waiawī blossom, also known as lemon guava. These guavas aren’t the large, cultivated kind found in stores—they’re smaller, wild, and full of vibrant character.
The resulting honey carries a robust, refreshing flavor profile—slightly sweeter than our other varietals—with a bright, citrusy essence and distinct notes of lemon. Because these blossoms thrive in untamed forest terrain, the bees have access to a wide variety of native flowers, including other guavas like the red waiawī ʻulaʻula (strawberry guava), which dominate this region.
This natural diversity makes each harvest subtly unique, with evolving layers of flavor that reflect the richness and spontaneity of the wild. It’s tropical, dynamic, and absolutely delicious.
